The new deal will keep the 33-year-old at the club until 2011.
He told the club’s official website: “I feel as though I could go on for at least another four or five years, but when you get to a certain age, so much can happen with injuries and fitness that you cannot look too far ahead.”
Sorensen added: “I am really enjoying my time at Stoke. With the new training ground, everything is looking up.
“We have a very good first team, things are going well in the Premier League and I am pleased to be part of that.
“I want to keep playing for as long as I am good enough, fit enough and have the desire.
“It’s fantastic that I have so much to look forward to over the coming months with both Stoke and Denmark.”
Sorensen joined the Potters from Aston Villa in 2008.
